Introduction

I prepare this fish for Mexican fish tacos and serve with salsa and pico de gallo on fresh corn tortillas. One serving will make 2-3 tacos. Nutritional info is only for the fish, though. Note: NOT as crispy as if you fry it, but once wrapped in a tortilla with salsa and pico de gallo, I didn't even notice a difference. Ingredients

    40 saltine crackers, crushed (in food processor)
    1 egg, beaten
    1/4 eggbeaters
    1/4 tsp salt
    1/8 tsp cayenne pepper
    1/8 tsp garlic powder
    pinch pepper
    1 1/2 lb tilapia, thawed if frozen, cut crosswise in 1" strips

Directions

makes 48 fish strips

Preheat oven to 375*
combine spices with crushed crackers; beat egg with egg beaters. Dredge fish pieces in egg mixture, then in cracker mixture; Place on greased (with Pam) baking sheet. Bake at 375 for 10-15 minutes or until firm to touch.
