baked oatmeal is great on a snow day....I have changed the recipe slightly from the original (applesauce instead of oil) Also, I have made this with 1.5 cups brown sugar. Ingredients

6 cups quick cooking oatmeal
5 tsp baking powder
2 tsp salt
1.5 tsp cinammon
2 cups milk (1%)
4 eggs lightly beaten
1.5 cups brown sugar,packed
1.5 cups unsweetened applesauce
Directions
mix eggs, sugar, applesauce and milk together. Add oatmeal, salt and baking powder. mix all ingerdients together and pour into a 9x13 baking dish. refrigerate overnight. Bake for 45 minutes at 350 degrees or until a knife comes out the center clean.
