Ingredients

    1-1/2 cups (180g) whole wheat flour
    1 cup (110g) oat bran
    1-1/2 tsp. baking soda
    1-1/2 tsp. ginger
    3/4 tsp. nutmeg
    1/2 tsp. salt
    188g sucanat or 1 cup brown sugar
    2 T. oil
    2-1/2 cups cooked mashed pumpkin
    3 eggs, lightly beaten
    1-1/2 tsp. vanilla
    1-1/2 tsp. orange flavoring
    1 cup buttermilk
    1 cup (160g) raisins plumped in hot water and drained

Directions

Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together wet ingredients. Stir wet into dry just until mixed. Stir in raisins. Divide among prepared muffin tins. Bake for about 20 minutes or until done. Makes 24 muffins.

    Incredible!
    These muffins are moist, flavorful and have a great texture! I omitted raisins (not my favorite), but added 1/2 cup chopped pecans. Made only 1/2 the recipe and used one egg. - 11/15/09
