Ingredients

    4 eggs
    1 cup sliced ham
    mushrooms, onions, peppers chopped
    1/4 c canned tomatoes with chilis
    1/2 c shredded cheese (cheddar or monterey jack or a mix)
    cumin, salt, pepper to season
    Canola oil, 1 tsp

Directions

Makes 2 main servings or 4 side servings (serve with a salad).

Lightly coat an 8 inch skillet with canola oil or spray. Add veggies, stir until cooked, about 4 - 5 minutes
Add diced ham and tomatoes, cooking until warmed through, about 1 minute
Sprinkle cheese over the mixture in the pan.
Scramble the eggs in a bowl with the salt, pepper, and cumin. Add a tablespoon or two of water if you like fluffier eggs.
Pour over the mixture in the pan and cook until it sets, about 1 - 2 minutes.
Put in a 350 degree oven for 15 minutes.
