Introduction

Ingredients

12-16 oz chicken sausage
.5c onion, chopped
3 gloves of garlic, chopped
pinch fennel seeds (crushed)
red pepper (optional)
one bunch of kale, chopped (stems removed)
1.5c chicken stock
1 can canellini beans
salt and pepper to taste
Directions
1. Heat a medium ovenproof skillet or Dutch oven with olive oil. Brown chicken or turkey sausage over low heat until golden and cooked through. Remove the meat from the pan. When cool enough to touch, cut links into 1-inch-thick slices and reserve.
2. While the pan is still warm, sauté onion and garlic in the sausage renderings with water (to prevent them from getting too dark). Once the onions become translucent, add chili flakes, fennel seed, thyme and kale. Season with salt and freshly ground black pepper and sauté for 2 to 4 minutes, or until the kale begins to wilt.
3. Add chicken stock and white beans. Bring this up to a simmer for 5 minutes; add the sliced sausage, cover with a lid and bake in the oven at 350°F for 30 minutes, or until the kale has cooked down and the liquid has reduced.
4. Adjust seasoning. Eat cold or reheat; finish with grated cheese.
