Introduction

Ingredients

    1 Cup Sliced Leeks (only use the white part and the light green, where it is still tightly wrapped)*
    2 Cups Chopped Mushrooms
    6 Cups (more or less) 99% Fat Free Chicken Broth, preferably low sodium

    *Scallions, onions, and other aromatics can be added or substituted

Directions

Preheat a saucepan on medium-high heat. Add mushrooms and leeks, along with half a cup of the chicken broth. Once the veggies cook down a bit, add the remaining chicken broth. Season with either Onion or Garlic Mrs. Dash to reduce overall sodium content. Proteins such as beans, turkey meatballs, or chunks of chicken breast can easily bulk this soup up, and just about any vegetable can be added for more flavor and fiber.
