Introduction

Ingredients

15 Lasagne noodles
1 lb ground turkey
1 medium onion, diced small
1 tbs minced garlic
1 lb container of cottage cheese (2% lowfat)
1 26 oz can Spaghetti sauce
1 15 oz can petite diced tomatoes
2 large eggs
10 ounces of shredded monterey jack cheese
Seasonings to taste - I added garlic powder, black pepper, salt, onion powder, and Italian seasoning
Directions
Cook the noodles per package directions. Meanwhile, brown the meat with onions and minced garlic.
Mix the cottage cheese with the eggs, seasonings, and diced tomatoes.
Layer the noodles, meat mixture, and cottage cheese mixture in a large casserole dish, and pour the spaghetti sauce over the top. Sprinkle the cheese on top of the sauce.
Bake at 350 for 1 hour, or until bubbly and cheese is lightly browned.
Serve with a green salad to round out your veggie servings for the day!
