Introduction

Gluten-free pizza with sauce, cheese and hamburger. Even though this pizza has cheese, I will eat it occassionally in spite of my blood type O Non-Secretor status that requires me to avoid ALL cheese. Ingredients

    Pizza Dough:
    1 1/2 c. water
    1 1/2 Tbsp. olive oil
    1 1/2 Tbsp. agave
    3 1/2 c. gluten-free flour (quinoa/millet used in this recipe), sifted
    1/4 c. arrowroot flour
    1 1/2 tsp salt
    1 Tbsp. bakers yeast
    1 Tbsp. xanthan gum
    1/4 c. olive oil (for brushing dough)

    Sauce:
    1 can tomato sauce (29 oz.)
    6 cloves garlic, peeled and choppped
    4 bay leaves
    1/2 tsp. oregano, dried
    1/2 tsp.rosemary, dried and ground
    1/2 tsp. basil, ground
    1/4 c. agave
    1 lb. cheese, grated


    Ground beef topping:
    1 small onion, chopped
    2 cloves garlic, chopped
    1/2 tsp. spike seasoning
    1/2 tsp. oregano, dried
    1/2 tsp. rosemary, dried
    1/2 tsp.basil, dried
    1/2 tsp. turmeric, ground
    1 lb round beef
    1 can (4 oz.) mushrooms, drained and rinsed

Directions

Place water, olive oil,agave, gluten-free flour, arrowroot flour, salt, baker's yeast and xanthan gum in bread maker and set on basic dough recipe. While dough is mixing, prepare sauce. Heat sauce spices and garlic cloves over medium heat for a few seconds. Add tomato sauce and agave and bring to a boil. Simmer until ready to put on pizza dough. Remove bay leaves before pouring on dough.
While dough is mixing and sauce is simmering, prepare ground beef topping. Heat spices over medium heat for a few seconds, add onion, garlic, mushrooms, and ground beef and saute on med/high heat slowly constantly stirring until beef is cooked. Remove from heat and set aside. Divide dough into quarters and roll out to fit oiled cooking sheet. Brush with oil, cover and let sit for 15 minutes while you preheat oven to 400º F. I like to cook my dough before adding toppings to avoid undercooked crust. Bake dough for 5 minutes. Remove from oven and toppings. Return to oven and finish cooking for approximately 25 minutes watching for the crust to brown and the cheese to bubble. Remove from oven.
