Ingredients

    For broth:
    4tbsp earth balance butter
    1/2 cup flour
    1/4tsp celery salt
    1/2tsp ground black pepper
    8 cups vegetable broth (For this recipe I've used regular broth, but I highly recommend using low-sodium if available)
    2medium carrots diced
    1 package faux chicken strips (morningstar meal starters is what I use)
    1 bay leaf

    For Dumplings:
    1.5 cups flour
    1/2tsp salt
    1/2tsp baking powder
    1/2cup soy milk
    2tbsp vegetable oil
    1tbsp chopped parsley



Directions

1. melt butter in a large saucepan, slowly adding flour and spices for broth to make a paste.

2. Slowly begin to mix in broth, (i use a whisk to avoid clumping) and bring to boil.

3. Add Carrots, faux chicken, and bay leaf

4. Make dumplings: Combine dry ingredients for dumplings in mixing bowl. slowly stirring in milk and oil to make thick dough ball.

5. Dust a large cuttingboard with flour. Place dough in center and cover with dry flour. Roll flat to about 1/4 inch thickness

6. cut into desired size dumplings, dropping into boiling broth one at a time

7. Cover tightly and reduce to low heat, simmering for 20 minutes (check dumplings and carrots to ensure they are done before serving)
