Ingredients

    1T ground flaxseed
    4 very ripe bananas
    3/4 c. all-purpose unbleached flour
    3/4 c. whole wheat flour
    1/2 c. sugar
    2T butter, softened
    1t vanilla extract
    1t baking soda
    1/2 t baking powder
    1 egg
    2T applesauce
    1T cinnamon

Directions

Mash bananas in bowl.
Add all other ingredients and mix well.
Pour into greased loaf or bundt pan.
Bake at 350 degrees for 50-60 minutes or until toothpick inserted into center of cake comes out clean.
