Ingredients

    Splenda, eggs, 1%milk,eggs, all purpose flour, bananas, nilla wafers, vanilla extract.

Directions

Preheat oven to 425 degrees. In a double boiler combine 1/2 cup Splenda, flour, and salt. Stir in 4 egg yolks and milk; blend well. Cook, uncovered over boiling water, stirring constantly until thickened. Reduce heat and cook, stirring occasionally, for 5 minutes. Remove from heat stir in vanilla extract. Spread small amount in bottom of a casserole dish; cover with layer of vanilla wafers, top with layer of sliced bananas. Pour about 1/3 custard over bananas. Continue to layers wafers, bananas, and custard to make 3 layers of each, ending with custard. Beat egg whites until stiff but not dry; gradually add 1/4 cup Splenda and beat until peaks form. Spoon in top of pudding, spreading over entire surface, sealing edges. Bake 425 degrees for 5 minutes until top is golden brown. Makes 16 (1/2 cup) servings.
