Ingredients

    3 medium sweet potatoes
    1 can Eden Organic Blackbeans (or your choice)
    16 oz Pacific Natural Foods low sodium vegetable broth
    2 cloves garlic (minced)
    1 tbs chili powder
    1 tbs cumin
    1 tsp cayenne
    pinch of salt
    (Seasonings may be less or more. Season to your liking)

Directions

Boil peeled sweet potatoes until you can easily puncture with a fork. Drain, reserving 2 cups of the water. Mash potatoes in the pot or puree in blender (your preference). Add the vegetable broth, blackbeans, garlic and other spices to sweet potatoes. Add reserved water until you acquire the desired consistency for your soup. Bring to boil then reduce heat to simmer. Enjoy! Makes 4- 1 cup servings. (with the extra 2 cups of water added)
