Ingredients

* Onions, raw, 1 medium (2-1/2" dia)
* Garlic, 3 clove
* Olive Oil, 1.5 tbsp
* *Chilies, Ortega Diced Green - 1 sm can, 8 tsp
* Las Palmas Green Enchilada Sauce, 3.25 cup
* Bud Light Beer, 6 fl oz
* *Pork Ribs, country style, 24 oz
Bay leaf

Directions
Heat a large skillet to medium-high. Cut the country ribs into 1 inch pieces. Salt and Pepper to taste. Drizzle approx 1tbs of oil onto ribs and rub to ensure coating.
Brown ribs in batch and transfer to a crock pot.
Dice a medium yellow onion and garlic then toss in skillet for about 5 min. Pour half of a 12 oz beer into the onions and garlic. Reduce for 3 minutes. Transfer to crock pot.
Add approx 1 tsp chili powder and cumin. Add one bay leaf. cover crock pot with lid, turn to high and let cook for 2 hours.
Ribs will release a lot of fat. Drain fat.
Poor green enchilada sauce into crock pot and cook for another 1 1/2 hours.
an hour before serving dice one yellow bell peper and add to crock pot. One hour later serve with tortillas and/or rice and beans.
