Ingredients

3/4 lb tuna
2 tbs olive oil
2 oz tomato paste
1 14oz can diced tomatoes
2/3 cup white wine
1/2 tsp sugar
2 cloves garlic
3 tbs fresh herbs (basil, oregano, etc) (or 2tbs dried - we use "italian mix)
1 shallot or onion, minced
Directions
Cooking time is an estimate - will depend on how long it takes to brown the fish, and if you want to cook the sauce down at all.
Use a large skillet / "everyday" pan with lid. Depending on skillet you may or may not need to use oil.
Combine wine, tomato paste, sugar, herbs - set aside.
Mince 1 shallot or onion - set aside
In skillet:
- Add 1 tbsp olive oil to skillet; heat oil
- Cut fish into 1" cubes, brown in skillet, set aside
- Add 1 tbsp olive oil (if needed)
- Sautee onion till clear, add garlic
- Add combination tomato paste, wine, herbs, and 1 can diced tomatos (crush bigger tomatoes with spoon)
- Bring sauce to boil, turn heat down, simmer for 5 minutes
- Re-add fish to sauce, cook covered for another 5-10 minutes
