Introduction

Ingredients

    3/4 cup unbleached flour
    3/4 cup whole wheat flour
    1 tsp. baking soda
    .5 tsp. salt
    1/4 cup oil
    1/2 cup unsweeetened applesauce
    1 TBSP ground flaxseed dissolved in 3 TBSP water
    2 TBSP soymilk
    1 TBSP vanilla
    2 1/2 cup quick oatmeal
    6 oz. chocolate chips (dairy free. Sam's Choice is vegan. Just check the label.)

Directions

Makes 36 cookies.

Mix flours, baking soda, and salt. Set aside.

Mix oil, applesauce, and sugar until creamy.
Add flaxseed/water mixture.
Add soymilk and vanilla. Stir until mixture is uniform color. Slowly stir in flour mixture. Mix well. Stir in oatmeal and chocolate chips.

Place large tablespoons of batter on ungreased cookie sheet. Bake at 350 for 8-13 minutes. Should look moist but not too wet.

Let sit a minute before placing on wire rack.

    The number of servings doesn't match the number of cookies it makes. One cookie should equal one serving. 48 servings for 36 cookies equals less than one cookie per serving. - 7/3/11

    Incredible!
    Delicious. I used 3/4 cup turnbinado sugar. The recipe does not tell. I also used carob chips instead of chocolate chips. - 10/13/15
