Introduction

Instead of the brandy I've experimented with cognac and even Bailey's – all yum. Instead of the brandy I've experimented with cognac and even Bailey's – all yum.
Number of Servings: 48

Ingredients

    100g margarine
    300g dark chocolate (70% or more)
    2T agave syrup
    4T brandy
    100g dried pare, chopped
    3t crystalised ginger, chopped
    300g digestive biscuits

    Topping 150g white chocolate
    30g margarine


Directions

Line an 18cm springform pan with non-stick baking paper.

Crush the digestives.

Melt together margarine, chocolate, syrup and brandy.

Add the biscuits, pear and ginger, stir well.

Press into the prepared pan and smooth the surface.
Allow to cool and set for a couple of hours.

Melt the margarine and white chocolate (very gently). Stir to combine and spread over the cake to cover.

Refrigerate for 2 hours before cutting.

Cut into 24 pieces or 48 little morsels.
