Introduction

This salad is a meal in itself!!
For a lower calorie version, you can leave out the walnuts (takes off about 190 calorie per serving). I add them for the protien and fibre.

Ingredients

    3 med apples - peeled and sliced
    2 cups ham - cubed
    1 stalk celery - chopped
    4 oz (1/4 lb) walnut halves
    4 oz cheese - cubed
    1/2 cup plain yogurt - low fat
    juice & zest from 1/2 lemon
    1 garlice clove - minced
    1 tbsp olive oil
    pinch of pepper

Directions

Combine apples, ham, walnuts and celery with the dressing. Toss to mix. Add cheese.
Spread lettuce into four deep plates (or bowls). Top with the apple/ham mix.

Yogurt Salad Dressing
Combine yogurt with the juice & zest from 1/2 a lemon. Add garlic, olive oil and pepper (to taste).
