Ingredients

    Beans, pinto, 2 cup
    Water, tap, .25 cup (8 fl oz)
    *garlic, minced (1 clove), 1 serving
    Chili powder, 2 tsp
    *Cumin (ground), 1 tsp
    Corn Tortillas, 4 tortilla, medium (approx 6" dia)
    *Reduced Fat Mild Cheddar Shredded cheese, .5 cup
    *Dole Shredded Lettuce, 2 cup
    Red Ripe Tomatoes, .5 cup, chopped or sliced
    *Onion - Red/Purple - 1/4 Cup, 1 serving
    Cilantro, raw, 4 tbsp

Directions

Preheat the oven to 350 degrees. In a food processor or blender, process the beans, water, garlic, chili powder, and cumin until smooth. Put the tortillas on a baking sheet. Spread the bean mixture on each tortilla. Sprinkle with the cheese. Bake for 10 minutes, or until the cheese has melted and bean mixture is hot. Meanwhile, in a medium bowl, gently toss the remaining ingredients. When the tortillas are ready, spoon the lettuce mixture on each. Serve immediately.
