Introduction

Somewhat lower in calories and fat than traditional quiche because it uses 2% milk rather than cream and turkey bacon rather than pork bacon -- but still pretty tasty! You could further reduce the calories by using lowfat or nonfat cheese, but I prefer the flavor of full fat cheese. Ingredients

    Pillsbury refrigerator pie crust
    4 slices turkey bacon
    4 oz. swiss cheese
    4 eggs
    1.5 cups milk
    1 cup frozen spinach
    one half onion
    Sprinkle of nutmeg
    1/8 tsp. white pepper

Directions

Preheat oven to 375. Follow directions on box to prepare pie crust in 9 inch pie pan.

Saute onions until soft, place evenly in pie crust. Saute bacon until fully cooked, chop and place in pie crust. Saute frozen spinach until warm and spread evenly on top of bacon, along with grated swiss cheese.

Warm milk in saucepan until almost scalded, add pepper and nutmeg. Set aside to cool slightly. Beat 4 eggs in a bowl, add milk and mix. Pour milk mixture into pie crust.

Bake 35-40 minutes, until top is browned. Let sit for 5 minutes before slicing into 6 wedges.
