Ingredients

    Frozen Peppers and Onions-entire bag
    Fresh Spinach - 4 cups
    Olive Oil 1 tablespoon
    Egg Beaters 5 1/2 cups
    Fat Free cheese slice (per serving)

Directions

Sautee onions/peppers in olive oil. When translucent, add fresh spinach to wilt. Fold in Egg Beaters until cooked through to scrambled egg consistency. Melt cheese slice on top in microwave before eating.
