Introduction
I recently went out for a truly delightful dinner with a new friend. This recipe is inspired by the dish he ordered. I love to cook and I am always trying to make dishes healthier. Even though I used regular sausage you can make it even better with chicken or turkey sausage. Allen likes sausage and he shall have it. This version is tweeked with the addition of vegetables and whole wheat pasta. Healthy does not have to be boring and look 10 grams of Fiber. Now we're talking. Thanks for the inspiration. Ingredients

* Ronzoni Whole Wheat Penne Rigate 13.25oz , cooked according to package.
* Sweet Italian Sausage, pork 3/4lb.
* Olive Oil, 1 tbsp
* Peas, frozen, 0.75 cup
* Green Peppers, 0.5 cup, cut into strips and bite size
* Red Peppers, 0.5cup, cut into strips and bite size
* Red Ripe Tomatoes, 2 medium whole, cut into bite size
* Sundried Tomatoes (not in oil), 6 halves, cut into strips
* Garlic powder, 0.25 tbsp
* Onion powder, 0.25 tbsp
* Parsley, dried, 0.25 tbsp
* Pepper, black, 0.25 tbsp
* Basil, 5 leaves or .25 dried
* Red Pepper flakes, .75 tbsp (more or less depending on the amount of heat you like)
* Water, tap, .5 cup
* Mozzarella Cheese, part skim milk, 4 oz
* Parmesan Cheese, 2 tbsp
Directions
Cook pasta according to package.
In a Sizzling Hot pan cook sausage.
Remove sausage and set aside for later.
Using same pan add olive oil, then peppers and sundried tomatoes, saute for a couple of minutes.
Add tomatoes, spices, and then peas and saute for a couple of minutes. *Adjust spice to taste*
Add water or chicken broth and scrape up all the bits at the bottom of pan and let simmer for 2 minutes.
Cut sausage into small bite size pieces and add back to vegetable mixture.
Cook until the vegetables are to your liking.
Right before serving, toss over pasta, add cubed Mozzarella cheese and sprinkle Parmesan.
And toss it all together.
Serve and Enjoy.
