Introduction

A really simple way to jazz up plain old veggies and add in a little protein as well! A really simple way to jazz up plain old veggies and add in a little protein as well!
Number of Servings: 2

Ingredients

    2 Tbsp Parmesan Cheese, grated
    4 Tbsp Hummus (I used a roasted red pepper-flavoured one)
    1 Tbsp Water
    Vegetables of Choice - nutritional info is for 2 carrots and a half head of cauliflower

Directions

Preheat oven to 375 degrees.

Prep veggies being used - slice, chop, whatever! Just make sure your veg is cut in like sizes, so they'll all cook evenly.

Once the veggies are prepped, toss them in a baggie; add in the hummus and water, seal the baggie, and shake it like a Polaroid picture until everything's coated evenly.

Pour the mixture onto a cookie sheet in a single even layer (spray with oil/oil substitute if not using a non-stick pan), sprinkle with Parmesan, and bake for 20-30 minutes, or until everything's nicely golden and tender.
