Introduction

This is something I put together when I was getting tired of chicken! (But I suppose you could use chicken too...) This is something I put together when I was getting tired of chicken! (But I suppose you could use chicken too...)

Ingredients

    1 lb lean ground beef (turkey or chicken would work just as well)
    1/2 small onion, diced
    1 packet taco seasoning mix (I used Old El Paso)
    1 can refried beans
    6 hamburger buns

Directions

Brown ground beef with onion in nonstick skillet. Once it is cooked, add taco seasoning mix. I usually put about half a packet of water into this mix. Let simmer for about 15-20 minutes.

While beef is cooking, put refried beans in saucepan. I usually add a little bit of water and about a tablespoon of cumin to them. After everything is cooked, I put about a tablespoon of refried beans on the bottom bun and top with taco meat. You can add shredded cheese, fat-free sour cream, lettuce, tomato, and salsa! I normally put about a couple tablespoons of beans on the side as well.

Makes about 6 sandwiches - enjoy!
