Introduction

Number of Servings: 6

Ingredients

    2 chicken breasts
    1 packet of taco seasoning
    1/2 jar or 1 cup of salsa
    1 can of 98% fat free cream of mushroom soup
    1/2 can of the mushroom soup of water
    1 can of dark red kidney beans
    1 can of black beans

Directions

- In the crockpot, place the chicken.
- Cover the chicken with the taco seasoning.
- In a separate bowl, stir together the salsa, cream of mushroom, and water.
- Pour on top of the chicken.
- Drain the two cans of beans and rinse off in a strainer.
- Pour the beans on top of the mixture and smooth out with a spoon to make flat surface.
- Put the lid on & cook on low for 8 hours!

When complete, I cut each chicken breast into 3 pieces and 1 piece is used for each serving. I shred the chicken, then top the bean mixture with the chicken. Great served with rice, on a salad, or in a tortilla!
