Introduction

Crock pot meal with loads of veggies - easy! Crock pot meal with loads of veggies - easy!
Number of Servings: 8

Ingredients

    2 lbs Beef (stew meat), cubed
    4 md Carrots, sliced
    2 lg Potatoes, cubed
    1 lg Onion, diced
    1.5 C Green Beans, french style, frozen
    1 C Green Peas, frozen (i add these in the last 1/2 hour so they stay nice and green)
    2 Cloves Garlic, coarsley chopped
    1 C White Beans, drained and rinsed
    1 5oz Can Green Chili Peppers, diced
    1 28oz can Diced Tomatoes
    1 Can Campbell's Cream of Chicken Soup
    2 C Vegetable broth (can use beef or chicken)
    3 T Cilantro, chopped

Directions

Mix everything together in a crock pot. Stir well. Cook in crock pot on high 5-6 hours or on low for 10-11 hours. Enjoy!

* Can substitute chicken for the beef and it comes out just as good.
