Introduction

Yummy breakfast or anytime meal. I was challenging myself to find ways to get more vegetables into my diet and less simple carbohydrates. I also was having trouble getting enough fats into my diet, so if you want to make low fat, just use cooking spray in place of the olive oil and Smart Balance. Yummy breakfast or anytime meal. Ingredients

    3 cups fresh green cabbage, shredded
    1/4 tsp. Caraway seeds
    3 tsp. light olive oil
    1 tsp. Smart Balance buttery spread
    1/4 cup Herdez medium salsa
    1/2 C. Egg Beaters egg substitute

Directions

Add oil and Smart Balance in an 8" non-stick saute pan, heating over medium heat. Add the shredded cabbage to the pan and saute until slightly wilted, but still crunchy. While the cabbage is cooking, mix Egg Beaters and salsa in a small bowl, blending well. Spread the cabbage evenly over the bottom of the pan, then pour the egg/salsa mixture over the cabbage. Turn heat to medium low to low and let egg/salsa mixture set up to firm. Slide out of pan onto serving plate.

Salt and pepper to taste.

Makes 2 servings.
