Ingredients

1.25 cups whole wheat flour
1/2 cup old-fashioned oats
1 t baking powder
1/2 t baking soda
1/2 cup dried apricots, chopped
1 1/2 t ground cinnamon
1/2 t allspice
1/2 t nutmeg
3/4 cup 1% milk
1/3 cup reduced calorie maple syrup
1/4 cup applesauce, unsweetened
2 eggs
2 medium bananas, mashed
6 T mini chocolate chips (opt)
Directions
Pre-heat over to 325 degrees.
Lightly coat muffin pans with non-stick cooking spray.
Combine flour, baking soda, baking powder, and spices. Add apricots and chocolate chips.
In another bowl combine milk, syrup, applesauce, eggs and bananas. Pour into dry ingredients and mix till moist.
Pour into muffin tins and bake for about 20 minutes or until done in centers.
Makes about 18 muffins.
