Being anorexic, I wanted a safe SUPER low calorie lemon bar that I would feel ok about eating. Ingredients

For Crust:
1/2 cup all purpose flour
1/2 cup Splenda
2-3 tablespoons light margarine or butter
1 teaspoon baking powder
Dash salt
For Filling:
1/3 cup egg beaters
1/3 cup lemon juice
3/4-1 cup Splenda
Dash each of salt, flour, and baking powder
2 Tablespoons lemon zest
1 cup Unsweetened Vanilla Almond Breeze
Directions
Preheat oven to 350 degrees F
With a mixer, beat 2-3 tablespoons light butter and 1/2 cup Splenda until creamy
Gradually add in 1/2 cup flour, 1 teaspoon+ baking powder, and dash salt until mixture is fine crumbs
Press into greased 8x8 baking pan and bake for 7-10 minutes
While crust is cooling:
Beat together 1/3 cup egg beaters and 3/4-1 cup splenda until frothy
Add in lemon juice, lemon zest, dash each of salt, flour, and baking powder, and 1 cup almond breeze
Pour onto crust and bake for another 30-35 minutes betwen 325 and 350 degree oven
Let cool and cut into 6 bars
