Ingredients

    1 cup flax meal
    1 cup almond meal
    1 Tbsp baking powder
    1/4 tsp sea salt
    2 tsp nutmeg
    2 tsp cinnamon
    1/2 cup (1 stick) butter, melted
    1/2 cup plus 2 Tbsp water (5 oz)
    4 large or 5 medium eggs, beaten
    sweetener to equal 1 cup sugar, liquid preferred

Directions

Preheat oven to 350.
Butter the cups of a 12-muffin tin. (I haven't tried it, but I read somewhere that paper muffin cups don't work because they stick horribly to the muffins.)
Mix dry ingredients well.
Add melted butter, water, beaten eggs, and sweetener to the dry mixture. Mix well.
Spoon into muffin cups.
Bake until browned on top, about 20 minutes.

    Incredible!
    Changed the butter to 1/4 cup plus 2 TBSP grape seed oil and added 1/4 TSP of stevia extract non alcohol. They are amazing !!! And I think it will drastically change the good fats and lower the carbs - 8/10/17
