This recipe is based on one from lowcarbdiets.about.com which is a wonderful place to find great-tasting baked goods made with almond meal. This is gluten free, grain free, sugar free, and very low carb. Ingredients

1 cup flax meal
1 cup almond meal
1 Tbsp baking powder
1/4 tsp sea salt
2 tsp nutmeg
2 tsp cinnamon
1/2 cup (1 stick) butter, melted
1/2 cup plus 2 Tbsp water (5 oz)
4 large or 5 medium eggs, beaten
sweetener to equal 1 cup sugar, liquid preferred
Directions
Preheat oven to 350.
Butter the cups of a 12-muffin tin. (I haven't tried it, but I read somewhere that paper muffin cups don't work because they stick horribly to the muffins.)
Mix dry ingredients well.
Add melted butter, water, beaten eggs, and sweetener to the dry mixture. Mix well.
Spoon into muffin cups.
Bake until browned on top, about 20 minutes.
