Introduction

Ingredients

8 oz. of high quality tuna
1 avocado
1 mango - be sure it is ripe
3tb chopped fresh cilantro
3-4 tb fresh squeezed lime juice
2 cloves garlic chopped
1/4 - 1/2 cup macadamia nuts - lightly crushed and then toasted
1/2 cup balsamic vinegar
1/2 tsp kosher salt
Directions
Put vinegar in small pot and reduce it until it will coat a spoon and reserve.
Trim the tuna of any skin, blood spots and sinew. Cut it into a 1/8" cube and then toss the tuna in olive oil.
Peel and remove the pit from the mango and roughly chop the fruit.
Peel and remove the pit from the avocado and roughly chop. Add the chopped cilantro, lime juice, garlic, and salt.
To serve I use a square form, Put the tuna in the mold first and fill it up to about half way. Add the mango and compress. Top it off with the Avocado mixture. Drizzle the balsamic reduction on the plate and sprinkle with the macadamia nuts.
