Introduction
This recipe is my father's..........I alway thought my dad was the best cook besides my mom............. This recipe is my father's..........I alway thought my dad was the best cook besides my mom.............Number of Servings: 4
Ingredients

1 bread loaf pan
1 lb ground beef...or you can use lean grd beef or grd turkey or grd chicken.......today I am using what is in my freezer
1/8 to 1/4 cup bread crumbs or you can use finely crushed crackers (i usually use crackers) but again using what's in the cabinet at this moment...lol
1 lge egg, beaten
1/2 homemade marinara or ragu sauce (any flavor) --out of marinara--also what's in cabinet....ha, ha
2 ozs each of red and yellow bell pepper
1/2 to 1 cup of stewed tomatoes, chopped
Seasonings (optional) I use a little oregano, basil, Accent, garlic/onion powder, Morton's seasoned salt
Directions
Preheat oven to 352 degrees
I normally mix everything on a clean counter
In a small bowl mix 1/2 cup of the Ragu sauce along with chopped stewed tomatoes, set aside until meatloaf is 5 to 10 minutes from being done
Place ground beef on counter, make well in center, add egg, bell pepper, and bread crumb......mix thoroughly......last add sauce.....mix until thoroughly mixed
Form mixture into loaf and place in pan.....bake for 25 minutes or until done (if any liquid drain off majority)
Take sauce mixture in small bowl and pour over meatloaf and bake another 10 minutes.........
This will make 2 to 4 servings depending on how thin or thick sliced........this recipe can also be doubled or trippled
