Introduction

Ingredients

    Ham Stock - 3.5 cups
    Bacon - 5 slices
    Leeks - 3 (white parts only-chopped)
    Carrots - 3 (peeled & chopped)
    Onion - 1 (peeled & chopped)
    Potato - 1 (baked potato size-peeled and chopped)
    Heavy Cream - 3 Tbsp

Directions

First cook vegetables in olive oil quickly for 5 minutes. Add bacon and then cook all together for about 20 more minutes until veggies are soft. Add ham stock and cook for another 25 minutes. Then blitz the mixture (all together or in batches) in a food processor or blender to make it a more creamy consistency. Now you have a choice. You can either put everything back in the pot and add the cream or you can do what we do and just cool it down and put it in the fridge or freezer. We don't add the cream until we're ready to re-heat the soup and eat it.
