Ingredients

Boneless Pork Loin Roast, 40 oz
Cornstarch, .125 cup
Salt, .5 tsp
Ground mustard, 1 tsp
Ground Ginger, ground, 1 tsp
Pepper, black, 1 tsp
Whole Cranberries, 1.5 cup
Cranberry Juice (not cocktail), 1/3 cup
Garlic, 2 cloves
Golden Raisins, 1/4 cup
Brown Sugar, .25 cup, packed
Granulated Sugar, 2 tablespoons
1/2 lemon, sliced
Directions
Put the salt, pepper, cornstarch, mustard, and ginger in a large gallon size bag. Add the pork loin and shake until the pork is coated. Add it to the slow cooker.
Top with the rest of the ingredients and arrange the lemon slices on top of the pork. Cover and cook on low for 6-8 hours.
