    2 Tbsp Canola Oil
    1 red bell pepper
    1 1/2 onions, chopped
    1 tsp minced garlic
    1 medium zucchini
    1 can corn
    1 1/2 cup mushrooms
    2 tbsp cumin
    2 tbsp chili powder
    1 1/4 tsp Sea Salt
    5 Roma Tomatoes
    2 cans Black Beans (low sodium ~ rinsed)
    1 Can Kidney Beans (low sodium ~ rinsed)
    1 Can Tomato Sauce (15 oz)
    1 Cup Vegetable Broth/Stock


Heat oil, add onions, bellpeppers, garlic, serrano peppers. Cook about 3 minutes. Add zucchini,corn,mushrooms cook 6 minutes till starts to brown around edges. Add chili powder, cumin, salt and cayenne. Add tomatoes and stir. Add beans, tomatoe sauce and water/veggie stock. Stir and bring to boil. Reduce heat to med low and simmer. stirring for about 20 minutes.
