    2 tsp olive oil
    1 lb boneless skinless chicken breast, 1 inch pieces
    4 oz portobello mushrooms, sliced or cubed
    1 can (15 o) chicken broth fat free
    1/4 cup dry white wine
    3 sweet potatoes, sliced
    1 can (15 oz) great northern beans, drainedand rinsed
    4 carrots sliced
    8 cloves garlic, minced
    1/4 tsp white pepper
    1 tsp herbes de provence
    1/4 cup snipped fresh parsley
    2 whole parsnips, peeled and cut into large pieces


Heat olive oil in large nonstick skillet over medium-high heat. Add chicken and mushrooms. Saute, stirring occassionally until chicken is lightly browned about 8 minutes.

Combine chicken mixture, broth, wine, potatoes, carrots. garlic, parsnips and white pepper in a slow cooker. Cover and cook on low for 6-7 hours.

Mix in the herbes de provence and serve garnished with parsley
