Ingredients

For the sauce:
1 C tomato sauce
1 C water
1 large onion, chopped
1/2 tsp cumin
1/2 tsp oregano
2 Tbsp cornstarch dissolved in 4 Tbsp water
For the filling:
14 oz package firm tofu, drained and mashed
1 onion, chopped
1/2 tsp chili powder
1/4 tsp cumin
1/4 tsp garlic powder OR 1 tsp minced fresh garlic
1 1/3 picante sauce
3 C spinach, steamed
12 tortillas
Directions
Preheat oven to 350 degrees F.
Place all sauce ingredients, except cornstarch, in a small pan. Cover and cook over low heat for 20 minutes. Stir in the cornstarch mixture, and cook until sauce thickens.
Prepare the filling: Mix the tofu, onion, spices, and picante sauce.
Put some of the spinach in the middle of each tortilla; then add 3 - 4 heaping teaspoons of the tofu mixture. Roll tortilla. Lay seam side down in a baking dish. Repeat until all 12 tortillas have been filled and rolled.
Top with vegan sour cream or cheese if desired (not included in nutrition calculations). Cover with sauce. Bake 20 - 25 minutes.
