Introduction

This recipe is a simple derivation from Katie's Spicy Chicken Chili in the SparkPeople recipe database. I used boneless, skinless chicken breasts, and stir-fried cut pieces in olive oil. Also, the cooked chicken was combined with all other ingredients in a Crock pot. Great served with a dollop of sour cream or plain Greek yogurt. Makes 6 quarts, 24 cups. Ingredients

    1 Tbsp olive oil
    2 Tbsp minced garlic
    56 oz chicken broth
    3 15.5 oz cans of white beans
    1 6 oz can of tomatoe paste
    1 28 oz can of diced tomatoes
    2 boneless, skinless chicken breasts- about 22 oz
    2 large onions
    1 4 oz can of green chiles
    1 4 oz. can of diced jalapeno peppers
    1 Tbsp of ground cumin
    1 Tbsp of ground cayenne pepper
    1 Tbsp of chili powder
    3 Tbsp of corn starch for thickening
    Makes about 6 quarts, or 24 cups

Directions

Cut chicken in small pieces and stir-fry with garlic in olive oil. About 5 minutes.
Dice onion, measure all other ingredients (sans corn starch) and combine with cooked chicken in Crock Pot..
In a small bowl add 1 Tbsp cornstarch with some liquid from Crock Pot and whisk. Add back to Crock Pot. Repeat two more times.
Cook about three hours to allow flavors to meld. Serve with dollop of sour cream or nonfat plain Greek yogurt.
