Ingredients

    * 6 smoked Jalapeno Peppers (chipotles)
    1 cup water
    1 cup Chicken stock, home-prepared
    3 large Onions, cut in half and sliced
    6 Chicken Breast, no skin, 6 breast, bone and skin removed
    3 Tbl Canola Oil, 3 tbsp

Directions

Preheat oven to 350.

Soak dried chiles in warm water for 30 minutes. Save the water. Split and remove the seeds and stem. Chop pepper flesh in food processor roughly; add enough chicken stock to soaking water to make 1.66 cups. Process with peppers until smooth.

Saute the onions in oil until soft (about 5 mintues).
Put the onions in a large casserole, spreading on the bottom. Sprinkle with S & P.

Arrange Chicken breasts on top of onions; again add some S&P. Pour chipotle sauce, making sure all the chicken is well coated.

Bake for 45 minutes - 1 hr, until chicken is cooked through.

Served with rice.
