Ingredients

Granulated Sugar, .5 cup (extra fine)
Pears, fresh, 3 pear, large (approx 2 per lb) (slightly unripe)
Butter, unsalted, 1.5 tbsp
Ginger, ground, .5 tsp
Almonds, .25 cup, sliced (toasted)
*Puff pastry, frozen, ready-to-bake, 9 oz
Egg, fresh, 1 large
Milk, 2%, 1 tsp
Directions
Preheat oven to 375
Add sugar and 1 vanilla bean (scraped out) to half a cup of water into an 8" ovenproof heavy-bottomed pan. Bring to boil, do NOT stir. Simmer until thick.
Cut the pears (which should be slightly unripe) into 6 wedges each. Add the pears into the syrup and coat. Stir in butter and reduce for 5 minutes more. Carefully take off heat, sprinkle ginger and almond slices.
Roll out puff pastry. Cut in circle, same size as the pan. Mix eggs with milk, lay pastry on top of the pears, tuck in the edges and brush with the milk and eggs mixture. Put pan in oven (circa 20 minutes) or until pastry is brown on top. Remove, cool down.
Carefully place a plate on top and turn over (quickly). Serve straight away (aha cook is english). Top with clotted cream if desired.
