Introduction

Ingredients

* *Farmland 95% Fat Free Cubed Ham, 8 serving
* Egg, fresh, 8 extra large
* Milk, 1%, .5 cup
* Zucchini, baby, 1 medium
* Mushrooms--prepackaged slices--8oz by weight.
* Cheddar Cheese, 1.5 cup, shredded
* *Calidad Brand Flour Tortillas Burrito, 10 serving
Directions
Finely chop the mushrooms and zucchini.
Spray large pan and place mushrooms and zucchini in the pan. Stir fry until mostly tender--it will be a little watery, let that evaporate some.
Blend the milk and eggs and then pour into the pan.
Add the ham and if you want, 1/3 of the cheese.
Scramble all together until eggs are cooked.
Lay out your tortillas. Place 2/3 of a cup, of the scrambled egg mixture into a tortilla, sprinkle on some of the cheese, and then fold into a burrito form. Wrap in foil and freeze. Repeat until you have used all of the tortillas.
To reheat from frozen in a microwave, heat for 1 to 2 minutes depending on the power of the microwave.
To cut calories, omit the ham and/or lessen the cheese amount. You can also do this with eggbeaters. Feel free to add more veggies if you want.
The prep time is estimated with the use of a "chopper" machine or you could use a food processor.
