Ingredients

    1 cup Hodgson Mill Multi Grain Hot Cereal with Flax
    1 cup unbleached white flour
    1 Tbsp. baking powder
    1/2 tsp. baking soda
    1/2 cup Splenda
    2 large over ripe bananas, mashed
    1/2 cup Silk Light Plain Soymilk
    1/2 cup egg substitute (or 4 egg whites)
    1/4 cup light olive oil
    1 tsp. vanilla flavoring
    1/2 cup chopped walnuts

Directions

Preheat oven to 400*F. Grease 12 muffin cups or line with paper. In one bowl, blend together dry ingredients and set aside. In a second bowl, blend together all other ingredients except walnuts. Gently stir moist ingredients in with dry ingredients and then stir in walnuts. Spoon into muffin cups. Bake about 22 minutes. Tops will be golden, puffy and will spring back to touch. Cool on wie racks. Enjoy hot or cold. These are not sweet. If you like sweet, serve with honey or sugar-free jam. I liked them just the way they came out of the oven! Serves 12.
