Ingredients

Sauce:
2 1/2 cups fresh orange juice
3 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
1/2 cup low sodium soy sauce
1 tablespoon balsamic vinegar
1 tablespoon sesame oil
1/3 cup chopped peeled fresh gingeroot
6 six ounce 1-inch thick tuna steaks
1/4 cup sesame seeds
spray oil
Directions
In a medium saucepan, combine citrus juices, soy sauce, vinegar, sesame oil and ginger. Simmer 15 minutes. Pout through a fine sieve into a bowl. (Sauce may be made a day ahead and chilled, covered. Reheat sauce before preceeding) Add 1 tablespoon corn starch. Simmer on low hieat, stirring until starch is blended and sauce thickens.
Preheat oven to 400 deg Spray tuna steaks with spray oil and coat all sides with sesame seeds. In a large non-stock skillet, heat over moderately high heat until hot, but not smoking. Sear tuna steaks on each side approximately 1 minute per side. Cook tuna in middle of oven for 4-5 minutes for medium rare or 5-6 minutes for well done.
Pour about 1/4 cup of sauce around tuna on each plate.
