Introduction

with black beans, corn and sweet potato cubes with black beans, corn and sweet potato cubes
Number of Servings: 12

Ingredients

    12 C Homemade Chicken Broth
    4 Chicken Breasts, (skin and bone removed), shredded
    1 Can of Black Beans, rinsed and drained
    1 Large Yam, diced
    1 Bag of Frozen Corn
    3 TB Chili Powder (or to taste)
    4 TB Cumin (or to taste)
    1 TB of ground coriander (I grind my own)
    2 TB olive oil

Directions

Make your stock or use low sodium stock in a box
In soup pot, add olive oil and saute onion and garlic until translucent. Add cumin, chili powder and coriander, cook to blend flavors. Add broth.
Add sweet potato diced.
When potatoes start to soften, add beans and corn and shredded chicken into pot.

Let cook until potatoes are soft.
