Ingredients

    3/4 cup brown rice (long grain - NOT instant)
    3/4 cup water
    3/4 cup chicken broth, low sodium
    1/2 tbsp EVOO
    1/2 tsp Kosher salt
    2 carrots, chopped
    1/2 cup frozen peas
    dash salt, pepper, garlic powder

Directions

Preheat oven to 375. In a small saucepan, combine water, chicken broth, EVOO and kosher salt. Bring to a boil. Meanwhile, combine rice, carrots, and peas in a small baking dish (make sure it has a lid). Once liquid is boiling, pour over rice mixture. Stir 2-3 times to combine. Place foil over pan and put lid on top of foil. Bake for 60-65 minutes. Remove from oven and let sit 5 minutes. Open lid and add salt, pepper and garlic powder to taste. Serve immediately.
