Introduction

A regular old meatloaf; not especially light. Oh, well. A regular old meatloaf; not especially light. Oh, well.
Number of Servings: 4

Ingredients

    1# Lean ground beef
    1/2# Lean ground pork
    1 Large egg
    1/2 cup chopped onion, sauteed
    1/2 cup chopped red bell pepper, sauteed
    1/4 cup chopped celery, sauteed
    1/2 med Haas avocado, diced
    2 packets plain instant oatmeal
    1 tbs soy sauce
    Salt and pepper, to taste.

Directions

Preheat oven to 350F.

Sweat the chopped vegetables (except avocado) for 10-15 minutes in just a bit of olive oil. Combine with the remaining ingredients (except ketchup) and form into a loaf. Line sheet pan with baking parchment paper. Place loaf onto parchment.

Bake in pre-heated oven for 60 minutes. At halfway point, brush with ketchup.

Let rest for 5-10 minutes before slicing.
