This recipe is very tastey. You can add a lot of varitey to this one. Basically anything you would make a burrito with can go on and or into this recipe.
Many optional ingredients can be added such as spanish rice or regular rice as a layer on the beans.
Black sliced olives.
The use of Ground turkey or even cubed or diced chicken or fish or pork.
It can be topped with salsa or sour cream.

Number of Servings: 8

Ingredients

    1 Pound Lean ground Beef 93% lean
    1 medium White Onion Diced
    3 Flour Tortillas
    1 16 oz can of Fat Free Refried Beans
    1 Can Diced Tomatoes with Onion and Bell Peppers (Drained)
    1 Can mild RoTel (Drained)
    12 oz Shredded Medium Cheddar Chesse
    1 Bunch Green onions sliced
    Non Stick Cooking spray I use the Olive oil type

Directions

Brown and drain ground beef or turkey with white onion in a skillet. Seasoned to taste.
In a sauce pan combine refried beans, mild Rotel (drained) and canned diced tomatoes with onions and green bell peppers (Drained) If Rotel and Tomatoes are not drained it makes the whole dish too wet.
In a deep round baking dish with a lid first spray the dish with Non-Stick cooking spray then Place 1 tortilla on the bottom of the dish then layer first:
Refried bean mix
Ground burger or other meat
Shredded cheese
green onions
Black Olives (Optional)
Repeat for a total of three totilla's
Cover with lid and bake for 20 to 25 min on 350 dgrees until cheese is melted and dish is heated through.
VERY IMPORTANT:
Let dish stand and cool for 10 minutes before cutting and serving or it will just be too soft and come out a mess. If allowed to cool you can see all the layers like in a pie.

    never heard of rotel,, I can my own tomatoes,, - 1/25/11

    It is so awesome that you can your own tomatoes! Home canned ingredients add such a richness of flavor to reciepes that can't be beat.
    Rotel is basically spiced Tomatoes that have chillis in it and is rated by degree of hotness as in mild, medium and hot.Thank you for your comments. Very Appreciate
