Ingredients

Pork fillet, about 600 grams
150 grams raw onions
2 raw garlic cloves
2 tablespoons olive oil
150 grams raw baby carrots
1 tin chickpeas
150 grams dried prunes
1 tablespoon honey
100 grams fresh lemon zest
salt and pepper to taste
ginger and cumin, about 1/4 teaspoon each
100 grams cooked couscous per person
Directions
Heat up a pan and add the onions, then quickly 1 tblespoon of olive oil.
Add the chopped garlic. Let it fry till soft and add honey to help caramelize.
Remove from pan, cube meat and scorch with another tbsp of olive oil in the same pan.
When done, remove from pan and add a cup of water to make a broth.
Flavour meat with salt, pepper, ginger and cumin.
Transfer to tagine and add carrots, prunes, chickpeas and broth. (And a little more water if needed, depending on the size of your tagine.)
Cover and cook in a slow oven for around 1 to 1.2 hours.
Serve with steaming couscous for a hearty meal!!
