Introduction

Based on recipe from Rick Bayless' Mexican Everyday cookbook, with reduced quantity of oil & adapted for salmon instead of whitefish. This is super-simple, with fish fillets on a bed of potatoes, covered with salsa & baked until cooked. Ingredients

    fish, potatoes, salsa, oil or cooking spray, salt & pepper, cilantro (optional)

Directions

Peel potatoes, slice into 1/4" thick slices. Place in bottom of greased 9x9" pan, cover with plastic wrap, spray with cooking oil, sprinkle with salt & pepper, then microwave 4-5 minutes or until almost cooked.
Top with fish fillets, dump 1 jar of salsa (16 oz) on top.
Bake at 400 for 20 minutes or until fish is cooked.
