    1 onion, diced
    1/4 cup EVOO
    2lb chicken breast or thigh, cut into 1" cubes
    10-16 oz mushrooms, sliced
    1 lb pasta
    7 oz gruyere cheese
    1 cup chicken broth


Preheat oven to 350 F.
Toss the vegetables in the olive oil. Set aside.
Cook the pasta till partially cooked but still firm. Drain and layer in a casserole dish. Top with chicken, then vegetables, then cheese.
Pour broth over the whole thing.
Bake at 350 for 45 minutes.
