Number of Servings: 8

Ingredients

    2 cups potatoes, diced
    1 large carrot, diced
    1 cup leeks, chopped, white part only
    1 medium garlic clove, minced
    4 cups fat-free chicken broth
    1 teaspoon bay leaf, crumbled, or 1 whole leaf
    1/4 teaspoon black pepper
    6 oz. cooked Canadian style bacon, diced
    1/2 cup fat-free milk
    1/2 cup fat-free half & half cream

Directions

Makes 8 servings (1 1/2 cups each)

In slow cooker, combine first 8 ingredients. Cover and cook on low for 10-12 hours, or until vegetables are tender.

Stir in milk and half & half. Heat through, uncovered, about 10 minutes.

Serve and enjoy!
